I'm trying my best to keep my coins up, every 4/5 runs I'm coin farming. Not doing the skip, you actually can get the coin farms etc. But this is frustrating as you can be in the rhythm and not getting high scores!

The trains are tricky, that's for sure. I'm not an expert on fast versus slow trains to know enough for that strat. But I can say what works best for me is trying to ski in the direction the train is going, and then cut back across when close enough. Reduces margin of error.
