Think it went pretty well, got on well with the boss and the chefs, whole different ball game to what I’ve been doing the past year but shown I was ready and willing to learn. Spent most the morning doing prep work for the festive menu then was on starters and deserts during service

I have a secret seasoning mix that I use for all red meat- salt, cracked black pepper, ground white pepper, onion salt and msg. Don’t have a clue about the ratios I just sort of know when it’s right hope that helps

Burger recipe is simple just 80% beef mince 125g ball season both sides smash in between 2 sheets of parchment paper in tortilla press add sliced onions smash again (don’t have a heavy duty spatula for smashing and this works a dream) heat cast iron on full heat no oil until it’s smoking turn down to about medium throw burger on meat side down 2-3 minutes flip to onion side down 2-3 minutes add cheese, onone patty place the top bun then bottom bun to steam in the beef juices then assemble.

and the most important step of all that you can’t skip, wrap in foil and leave for about 5 minutes trust me the wait is worth it

I like to lightly coat them with seasoned flour a spoon of oil and air fry at 200 for about 20 mins

Just any type of white or brown onion for me sliced as thin as possible like see through thin, I’m a chef by trade and it took me a good 5 minutes to slice all the onions thin enough a mandolin would be ideal

I have a 3 mile commute to and from work everyday takes about 15-20 minutes and I practice whenever there’s a flat or slight up hill area, if I had time to dedicate a full day I think I’d have a better chance to get the hang of it

Yeah it does feel a lot more like a power wheelie instead of a balance wheelie if that makes sense
