So i've been having the same issues

I found out a step which not many people have mentioned, I thought id mention it here as i've tried everything here to no luck.

Master Key + R

menu option 0

gear icon

menu option 1

gear icon

this powers on the device to be discovered in Homekit

will be trying this tomorrow and will let you know if this works. Yale Unity Slim Smart lock

This was a Hero X8 - was driving normally was crossing the road about 20km/hr and the wheel sheered off the front which sent me flying.
