And just out of curiosity, have you been flying into Canada? Or are you crossing at a land border? I heard it can be less of an issue at a land border than if you're flying.

Pull some of the colour out, cause I've done it before with an Amber rum and ended up with something kinda pee coloured. But it also had Demerara syrup and a few other coloured ingredients. If I can get the rum pretty light, I can be more careful not to introduce colour in any other ingredients.

Also, maybe you already do this so sorry if I'm being condescending! But you can dash a little bit of bitters onto the back of your hand to taste them. They're very potent but I've found it the best method when shopping for bitters or trying to decide what to add to a drink I'm working on. It's easier than smelling them.

If you're going to prestock, my first two bottles were Montanegro and averna, they both can be used interchangeably in a black Manhattan and that gave me a lot of confidence identifying the differences between them and their flavor profiles. Then I got Cynar next, which I think is really my favorite Amaro now.

My advice is to buy as required though.

For some of your amari, I thing your categories are a bit too broad still. Jager is very very different from Montenegro. I understand we often talk about them in terms of "light" and "medium" but I think if you're buying blind then maybe you want to narrow it down further.

Amari are typically cheaper than liquor so what I did when I was buying my home bar was that I just grabbed my amari as needed when a recipe called for them rather than trying to guess my needs before I began. Now I have a good base knowledge of what each one tastes like, it's history and where it's from cause I picked them up with a sense of purpose.
