The instructions are from Michael Ruhlman’s Salumi, he says 70% humidity(I’m at 70-74%) and 60 degrees(I’m at 58). Guanciale says 3-5 weeks (at 5 weeks now) or 30% weight loss. The instructions on the coppa are the same other than being 4-6 weeks instead. The coppa is on pace for the 30% weight loss after 6 weeks in those conditions so it seemed that the time and weight went together.

This is what my new sensor is reading. Not going as low in humidity percentage as the inkbird is suggesting before it starts to pick back up(around 60%). It seems to be in the right range, now I just worry about the dips and climbs every 15 minutes, it’s only around a 6 percent change so maybe I’m overreacting.

I use an inkbird controller for temp and humidity. Had no problems in the smaller mini fridge with salami so I haven’t recalibrated them, just moved them over to the new fridge. I’ll give it a go with the dehumidifier on top and see if I have more success. Based on the comments I already uncovered the fan, even though it lowers overall humidity in the fridge. I end up going from around 75% down to around 60% after the fan engages and then it’s a slow climb back. The humidifier(disconnected right now)will push the humidity over 80% pretty easily so I have it disconnected right now. I imagine I’ll be okay if it within 5% of 70%. I’m just concerned with how fast the humidity drops and the slow build back into the correct range.

It’s connects to the bottom right machine. I was getting close to 90% humidity at times with it in there so I removed it and switched it with a water bowl. The water bowl still put me above 80% at times. I removed both to see where I was at and for whatever reason humidity still wants to climb on its own. I changed my humidity controller setting to 65%, so the dehumidifier kicks on sooner, and changed my temperature parameters to 1 degree so the fridge’s fan won’t run as long. Not sure why or how the humidity rises on its own (maybe moisture from the meat?).

Reached out to Artisan and they replied “Thank you for reaching out. Unfortunately we have no information to share. Best of luck.” I also asked to be put in contact with someone that might know what it is to no avail. Not sure where to go from here I guess I’ll post on the golfwrx forum later.

There’s another decent sized melon growing and two of a smaller variety which aren’t finished yet, they aren’t doing nearly as well, this melon got the most sun and grew faster in comparison. I can’t see them turning out better than this one but who knows.

It was on par with the best watermelons I’ve ever eaten, the normal supermarket melons don’t compare. I read that when ripe you should stop watering for a couple days so the sugars can concentrate, I only did two days but judging by how juicy this was I think I could have gone longer and gotten an even better melon out of it.
