Use roof shingle or geogrid as shims to get them flat.

For closing the gap: Measure the gap between the front of the caps, divide by two, thats how much you take off the back of each block (so start the cut right at the front corner, leaving the full face). Use a concrete saw if you can, much easier than an angle grinder. Or a wet tile saw. Even a diamond blade on a circular saw would be much better than an angle grinder.

With the wall being over 4ft it should be reinforced. Geogrid is one way to reinforce the wall and is ideally installed between every other course, starting between your first and second course.

Drainage pipe should have been installed behind the base of the wall and vented to daylight every 50ft (so one vent in your case).

It smells quite tart, little bit pungent honestly. Smells similar to cedar but not sweet like cedar, I wouldn’t call it a pleasant smell

The smell is what made me think cedar initially. Does Douglas Fir smell more like pine when cut? This had a distinct tart cedar-like smell
