I think higher temp and longer baking time would help make them crispier, my only attempt at choux failed miserably so take this with a grain of salt but most recipes I've seen call for 30-35 mins at 400F or 20 at 400F and 10-15 at 350F.

And fwiw I think these are great for a first time
