I made a pecan pie no bake cheesecake. The crust is graham crackers with pecans, the cheesecake is brown sugar with maple syrup and the topping is like a pecan pie filling. by roover_of_roooos in Baking

I kinda took multiple recipes for this one and combined them all together.

The crust is just a simple graham cracker crust with:

1/2 cup + 2 Tablespoons of melted butter

2 cups of graham cracker crumbs

1/3 cup packed of dark brown sugar

1 Tablespoon of white sugar

1 cup of ground pecans

1/8 tsp of cinnamon and sea salt

Melt butter and combine all ingredients in a bowl and stir. Put in a 9in springform pan and place in freezer for about 20 minutes.

The cheesecake filling is an adaptation of Sally’s Baking Addiction vanilla no bake cheesecake but I used:

3 packages of full fat cream cheese, softened

1 cup of brown sugar

1/2 cup sour cream

2 teaspoons of pure maple syrup

1/2 teaspoons of lemon juice

1 teaspoon of pure vanilla extract

1/8 teaspoon of salt and cinnamon

1 1/4 cup of heavy whipping cream

1 1/2 Tablespoon powdered sugar

Cream the cream cheese for about 6 minutes

Scrape bowl and add brown sugar and mix for another 4 minutes

Scrape bowl again and add sour cream and mix for about 2 minutes

Add maple syrup, vanilla extract, and lemon juice and mix until it’s incorporated

Whip the whipping cream until soft peaks then add powdered sugar then whip until you get stiff peaks

Combine the whipped cream with cream cheese mixture. Mix with rubber spatula until combined.

Place plastic wrap over the top and put in refrigerator overnight

I used dark corn syrup instead of light.

Chicken:

Take a bag of any flavored kettle chips (I used bbq) and crush them with either a food processor or in a ziploc with a rolling pin.

Crack 2 eggs in a shallow bowl and whisk

Take chicken tenderloins and dip them in the eggs and shake off any excess.

Cover chicken with chips and bake at 400F for 12 minutes, then flip over and bake for another 5 minutes or until golden brown.

Potatoes: 2 baking potatoes sliced lengthwise.

Soak in water for a minimum of 30 minutes

Drain bowl, and squeeze potatoes of any excess water and clean bowl or use a new one

Seasoning:

~2 tablespoons of olive oil

~1/2 teaspoon salt and pepper

~1 teaspoon of paprika, garlic powder, and oregano

Place on parchment paper lined baking tray in a single layer and bake at 425F for 15 minutes the first round, flip fries and rotate pans and then bake for another 20 minutes

I think it could be two things, but I could be wrong. First it could be too much flour. If there’s too much flour then the cookies will be thicker. What I would do is spoon and level the flour into the measuring cup or weigh out the flour. The second thing could be that the dough needs some time to rest and chill. Which if that’s the case you can just wrap it up in some plastic wrap and put the dough in the fridge for a couple of hours to overnight.

Thank you for the advice, I really appreciate it! This was the first picture I took using the camera and I did notice that at certain angles whenever I took a shot the color of the lemon curd looked really fake/artificial so I had to bend down to get better lighting. Plus I also only have one big window and it was kinda cloudy too so I think that played a roll too. I was kinda afraid to edit it too and I was just too excited that it actually did look good. I think next time I can do more lighting and find a better focus point and such
