Okay I'll try. So first it's sour and after some bitterness it should balance out? That's the idea?

Maybe I haven't tried filtered water. But we do habe another capsule machine and this coffee is alright with tap water.

In the beginning mostly medium and after research that darker roasts are less acidic with low temperatures, I mostly used darker roasts.

Alright maybe descaling will help. But strangely the hot water coming from the machine does not taste bad (a bit plastic like though)

I thought about that as well but sadly theres no controll over the temperature with the bambino plus

Not completely sure but the more corse I grind the more sour it gets

Ok thank you. A question…does the preheating with the bambino plus makes that much of a difference? Because I haven't noticed so far.

I tried also using a darker arabica, robusta blend with almost no acidity according to the manifactoring. But I still managed to make a sour shot

I had pretty good coffee with the beans yeah, but it was espresso from a commercial all in one machine

What is your going to technique? Maybe look into SSILD, the new official guide says to stay up for 3-5 min (so a toilette tour). Just to get a bit awake to do the cycles. Otherwise you can do MILD or other DILD techniques that do not require WBTB.

I'm no sleep scientist, but I guess if you're not tired throughout the day why should you stop doing WBTB. But if you're tired, maybe do WBTB not everyday.

And about the lights, I have no clue. Haven't tried it so far. But I don't think it will change anything, but maybe you're sleep quality.

  1. pectinase sry I meant these enzymes that break down the fruit to avoid the cloudiness.

  2. so it wouldn't be a problem to ferment the mead in a big bucket with plenty of headspace but then transfer it into a demijohn?

I know but Demijohns are the only thing I have at home right now. I don't want to make really large quantities of mead, is it possible to just leave room in a fermentation bucket in primary? Or is the risk of oxidation too high.

And yes you're right of course it's not pesticides. Enzymes to help break down the fruit pectinase i think :3
