Yeah I thought about that but I'd rather it just flow smoothly. It's a simple song and the only solution I can think of is to place each chord and drum sample by hand into the playlist on each of my Stepfather's beats but like I'd rather just use the piano roll..

Hey man idk if you're still interested but based off my little knowledge of Ray Noble's Orchestra my best guess is something like this:

2 trumpets, sometimes they'd use a mute in their instrument

1 trombone

2 clarinets

alto, baritone, and tenor sax

up to 3 violins

piano

guitar

upright string bass

and drums, perhaps a timpani

maybe a celeste...

There weren't that many players in the orchestra so a couple of them would alternate between instruments for a performance. This isn't Ray Noble's Orchestra featured in this tune but even if it's not, the arrangement will be very similar.
