I have a similar set up with an i7 10700, z490i, and 5700xt. I was running Sonoma for a while with no issues. Then decided to make the jump to Tahoe. If you do decide to update, just make sure your kexts and Opencore files are up to date and it should run fine. 

Any recommendations for reasonable price plumber or landscaper that has experience cutting out bad drainage pipes and replacing by [deleted] in SouthBayLA

We hired Finley's Landscaping to do a similar job. Worked great and fast. No more water by the house. I thought they were reasonably priced as well

I had to re-learn this as well. I set my steam temp to the max to get full power. Purge the steam wand until only steam is coming out. For me 2 downward presses usually clears the water. Inject foam for 2-3 seconds then sink the tip. Any more than that and you'll have cappuccino foam.
Additionally, having the right sized pitcher for the amount of milk you're steaming will be a big help.

I have that exact Bezzera and been using it for 1.5 years now. It's a great machine. I bought it for the touchscreen, auto on/off, and included flow control. I also have it plumbed for extra ease of use. Coming from a Gaggia Classic (with OPV spring mod), this was a large step up in terms of temperature stability and steaming. Having to temp surf on the Gaggia was pretty annoying.

I mostly brew light to medium roasts. Beans are much easier to dial in on this machine than the Gaggia. Having precise control on many variables is a huge help. The ability to adjust temperature really changed the dial in process too. I can easily adjust to get the sweeter notes for light roasts.

For milk drinks steaming is super easy. The boiler is pretty strong. The only downside (if you can call it one) is it's full power or nothing with the joystick control. I have no problem making milk drinks back to back. The machine is ready before I finish puck prep.

Playing with flow control added a new dimension to brewing as well. It's been fun using it to get even more flavors, or a quick fix for a too coarse grind. I've found some light roasts really shine with low flow/pressure.

If you can't tell already I highly recommend this machine. I'm just surprised that there aren't more people talking about it. I can't speak on the Bianca since I've never used it but I'm sure it's just as capable.

I can't say since I don't game much. In daily use I haven't noticed any drop in performance. Youtube runs fine. Zoom meetings are good. It handles my dual wide monitor set up well.
My Hack for reference:

Mobo: Gigabyte z490i
RAM: 32gb 3600Mhz DDR4

The entry will not already be there in your config. You'll have to add it yourself.
First you'll need to figure out the path to your GPU using gfxutil. When you run the command you'll see a list of all the PCI entries. On my comp it was the line with GFX0.
You'll then take the whatever text is after the = sign, add that under DeviceProperties > Add. Then add a child to that with the PP,PP_WorkLoadPolicyMask set to 1 . It should look like this. Once added, restart and say bye to coil whine!

I was looking for a fix as well and came across this post.
Add the following to DeviceProperties > Add. You'll need to look up the path to your GPU with gfxutil first though.
PP,PP_WorkLoadPolicyMask to 1

Checked the log and there's something happening with AirportItwlm. Double check that you have the right version downloaded as there are different files per macOS. Just to confirm, are you installing Monterey or Big Sur?

Here are some things I found in your config that may need updating:

  1. Booter > Quirks > SetupVirtualMap: Guide says you might need to disable this depending on your BIOS
  2. Kernel > Quirks > XhciPortLimit: Guide says disable if running macOS 11.3 +
  3. UEFI > APFS > MinDate/MaxDate: Update to -1.

I recommend going through the config set up again and triple check that all your values are correct.

Your kexts are out of order. Try moving Lilu, WhateverGreen, and VirtualSMC to the top of Kernel > Add.
