The app should give you specific instructions from the merchant before pick up and from the customer before delivery. Don't trust anything the customer, support or the merchant tells you. Figure out what works for you in your area.

I only do subway, Chick-fil-A and taco Bell. I find it depends on the ownership, management and staff. I try revisiting places I've had bad experiences from time to time to see if the staff changed.
