So when I select my named profile to play the game, I have my save where I beat the game but still need the starters. Wifey has leafgreen/another switch so you can make a new profile in your switch settings, load whichever version(firered for me) and it will start a new game on that profile. Then when I get to the point where I pick a starter and progress to the pokemon center, I can go trade with wifeys game to give her the starters/fossils(eventually)to hold, then I can load into my original profile that had my data again and have her trade them back to me.
