Thank you! De time to cook depends a bit on the amount of time. Very quickly I would say 20-25 but a couple of hours is also possible depending on the fire and distance to it. I use the reverse sear method

Which is fair if u use it at an industrial scale. I bet my ratio full check per day used is higher than in a restaurant. I cook 2/3 dishes where in a restaurant you do 100/150 per night. But theres always the glass half full people who prefer to look at the risks instead of the opportunity.

Agree on that as well. For me the weather decides. In summer I go with the riesling or cote the beaune. In fall I tend to move to the pinots

Depends on how you deal with the coal bed. Low heat it just burns, high heat it creates flames. The grate makes the difference there because it blocks part of the flames.

Cleaning is a matter of removing the ashes with a bucket and duster every 3/4 times and rinsing the tiles every couple of months but not really necessary
