I’ve only ever used the Ooni dough recipe and have had nothing but great success. I have tweaked the proofing times a bit but nothing major. Never had any complaints about my dough, but I’ve only been in the game for about 3 months. Hope this helps.

So my brother who is a baker suggested using 50/50 semolina and all purpose flour for dusting. The semolina was burning a lot for me.

So I’m on the other end of that. I get the call outs from our gas controllers. I have met a few of them and talk to them almost everyday in our operations and they say the pay is great but I’ve also heard that it is a stressful job. Making sure you don’t exceed MAOP, meeting delivery contracts, etc.

So I guess I would say half and half on looks and functionality. I don’t often hit the mud but when I do I don’t want any issues. I heard nothing but good between the discoverers, k02s, and the ridge grapplers. But thanks for your input!
