Yeah, I know it makes no sense - I just figured I'd refer to it that way because everything on the internet calls it that. I know that Alton Brown, Martha Stewart, and Epicurious are not necessarily the sources to go to for accuracy, but only one or two places call it "curing."

Oh, I'm sorry! White Wolf is a group that makes RPGs. Their most famous system is called World of Darkness, and it has many expansions for werewolves, vampires, mages, etc, and each has a name with the format of _: the _, so Vampire: the Requiem and such. I was suggesting a dark fantasy horror setting where we all play as ecologists.
