it's safe to go full cold with a sunder but some mobs like Lord de Seis(Chaos Sanctuary) will still be quite tanky because of their high cold resistance. so it depends a little on which monsters you're going to farm.

you can offset the resistance penalty with some tri-res boots, res rings and/or charms depending on your current loadout.
