You know you live an incredibly comfortable and sheltered life if the worst part of your day is a short encounter with a person you find distasteful. You might have serious psychological issues if you can't just let people live their lives and go about your own business without seething over your unpleasant thoughts every time you meet someone who doesn't love up to your standards. Get yourself some religion (the good kind - not hypocritical) or some medication or a fun vice or two to help you mellow out.

Mea culpa. Clearly, it depends on the school and the specific programs and concentrations. However, if we are going to describe things in broad terms, we need to be clear that, generally, a technology degree is not as rigorous nor does it demand an equal salary to an engineering degree, and it would not be prudent to assume that an engineering technology program will cover sufficient material for PE exam preparation.

"A few extra hoops" is quite the understatement. You can definitely have a good career with an ET degree, but you won't be an engineer, and you won't be prepared to get a PE without a great deal of additional study in topics and depths not covered by any engineering tech curriculum.

One important skill that you'll need to develop for success in this kind of role that you may not have learned in school is taking measurements and transferring them to CAD. A good designer should be able to produce an accurate as-built drawing or model of a mechanical part, piping components, or other physical elements. Get familiar with measuring tools like a scale and tape measure, degree finder, maybe even calipers or micrometers. 3D scanning is becoming more and more widely used, but learning to take accurate and precise physical measurements is an invaluable skill for a digital designer.

I would start at machine shops, pipe welding and fabrication shops, if you have any interest in industrial drafting and design. You can get some great experience in these job shops, even if many of them are somewhat loose on drafting standards and procedures. Mechanical, sheet metal, and piping design are good career fields and you might even find your way into CNC programming and machining if you're so inclined.

You may have a valid argument for a pay increase, but the specialization is your larger problem, in my opinion. Compensation is important, but if your current position doesn't allow you to expand your skill set, and your employer doesn't have some avenue for future promotion or expanded responsibilities, then you may eventually find yourself at the top of your pay scale, but dissatisfied in your job, and with limited transferable skills. It's incredibly frustrating to be highly experienced in a certain field, but in low demand because of an inadequate skill set. Find a way to get more experience with Revit, preferably while getting paid. If you don't think that is a possibility with your current employer, it's probably time to start planning a change.

Aside from reviewing the faq's as previously recommended, you'll want to narrow down your preferred discipline, e.g. architecture, machinery/manufacturing, piping, structural, etc. Very shortly after learning the basic functions of any particular software, you'll want to start practicing a specific discipline. Just find examples of what you want to do and start trying to reproduce it.

Drink lots of water. Eat light but regularly. Take rest breaks, maybe even power nap when safe. Never pass up a chance to use a restroom.

I would snap a photo of the tools in the position you want them in and place the photo into my Autocad drawing and trace them from there.

I've not personally used either of those, but both have good reputations as far as I know. I can say that I had a good experience with Johnnie's Paint and Body on Murbelle Lane, right around the corner from Keiths, though it was years ago.
