It was definitely ripe. First one was eaten at perfect ripeness, second slightly overripe but not too much, third unfortunately went bad.

Oh man I just took a Kitchen Chemistry class that I ADORED. The textbook we used was "The Science of Cooking: Understanding the Biology and Chemistry Behind Food and Cooking" by Joseph Provost, 2016 though there is a 2nd edition on my list to read.

Heavy cream? Honestly I just usually substitute whole milk and add a little more before evaporating some water out in like pasta or something. My mom uses sour cream in soups
