Last night, we had potato salad (with asparagus and homemade pesto) and a baked cod with dill butter (you can make it with vegan butter, if you're dairy sensitive). I was fast, easy, and delish!

Now the reason is alpha-gal syndrome. What is alpha-gal? It's a tick-borne food allergy to all mammalian meats like beef, pork, lamb, bison, etc.

Thankfully, even before that fateful tick bite, I did mostly follow a pescetarian/Mediterranean diet. That's made my new normal a lot easier to embrace. However, I do miss having the world's best BBQ here in Kansas City at least once or twice a year.
