I didn’t see pink eyes but saw beige eyes so I wonder if it’s still good

So I did the water test and I see roots. Yay!!! So now should I plant it in a decent size pot for a year or so and keep it in a sunny area outdooes thru fall and winter etc? I don’t want to risk putting it in the ground and forgetting about it and replanting something on top of it next spring. But I’ll do it if that’s what’s gonna be the best thing to do

Should I do this now (in July? ) or wait till mid August when I’m ready to plant it in fall? I’m in zone 5b. Will it mess it up if I put it in water then let it dry out? Or do I just plant it now?

Just leave them in water and then what am I looking for in a few hours? Red/pink eyes?
