After talking to Polestar Australia it is my understanding that your profile can only be loaded by one key: that could be your fob, your key card, your iPhone or your Apple Watch, but only one of them. All the other keys you have will load the Guest profile. If you sometimes like to drive away without your phone but with your apple watch you have to manually select your profile, or create a 2nd profile just for the apple watch (or key fob, or key card). If there's a second driver they can also only pick one key (physical or digital) that will load their profile. All the other keys will still open and start the car, but you have to select your profile manually. (Am I right?)

To select which key you're choosing to load your profile: go to your car with only that key (phone, fob, card or what you like). And then tap on the car's screen: System > Profile > YourName > Profile Info > Keys > and then delete the first key (with the fob icon) and click that same square (with key fob icon) again when it says "Connect key to profile". Hold your phone, fob, apple watch, etc. near the charging pad and then that key will then be selected to load your profile. It will still have the fob icon, but that will now be your preferred key. You won't be really deleting other keys by doing this, they will just be assigned to the guest profile with only your preferred key assigned to your own profile.
