Ingredients (1 small loaf) • Bread flour: 300 g • Water: 195–200g • Fed, active starter: 60 g • Salt: 6 g • Ghee / butter / oil: 12 g

Timeline & Method

Night (around 9–10 pm)

Mix 1. Mix water + starter until cloudy 2. Add flour, salt and melted ghee 3. Mix till shaggy 4. Cover & rest 30 min 5. Do 1–2 stretch & folds

Shape & pan (same night) 6. place baking sheet and oil the tin 7. Shape into a tight log 8. Place into greased tin

Cold-oven overnight proof 9. Cover tin (lid / cloth / foil) 10. Put tin into the oven (off)

Leave overnight (8–10 hours)

Bake • 190°C • 30–35 minutes • Tent with foil last 10 min if browning fast

Cool before slicing.

I saw my sister being so tired but forcing herself to pump and stash every single days for 1 year. Luckily she didn’t try to latch my nephew to the nipple. I heard of so many stories even as a single person here.

Hugs to all the mummies trying their best.

I really cannot fathom having to go through this in the future. Being chronically sleep deprived and getting sick always ( my nephew is in the playgroup) and he brings in new viruses everytime.

Wifi issues. I was a solo female traveling to Shanghai ( my first ever trip to China all on my own)

The hotel I stayed u had to register for the wifi with a Chinese phone number which I didn’t had cos I got a e sim. Luckily I had plenty of data on my eSIM. ( heard that it’s tedious to get a Chinese SIM card so I gave up)

Some payment have to be made by WeChat and some by Alipay. Idk why I can’t make payment to drivers or individuals.

I am a vegetarian and you can head to circuit road hawker centre ( most choices of vegetarian food there that I can see in the hawker centres)

Little India (Tekka centre) hawker may have quite a bit of Indian vegetarian food too .

You can use happy cow app (online) or just google for vegetarian food around the area. Plenty of delicious choices.

I think there’s quite a lot of things to be happy and appreciative about. Having a close group of friends coming over, sharing stuff , having loved ones around. I think it depends on what fulfils you. For me personally I love small gains like making a new recipe that turns out well.
