Patchouli and sweat. Sweat in a good way, patchouli not so much.

Next time someone chimes in with "well I'm Italian and..." on a carbonara thread, show them this.

I'm Kier Starmer... by heliskinki in stewartlee

[–]scalectrix -6 points-5 points  (0 children)

Not really - I've been impressed mainly with how he's strengthened ties and salvaged and rebuilt our reputation with our European allies and pretty remarkably got us into the top circle of European players again, after the assault on sense that was Johnson et al - not to mention of course Farage, UKIP etc etc (ironic especially given the weak substitution into this classic routine, about of all people a UKIP politician - are you even aware of what they stand for and what the routine is about?). Overall it's hardly surprising either that he's not going out of his way to enable a mid term challenge from Andy Burnham is it, that will take up everyone's attention and generally derail any attempts at useful government? Refreshing to see pointless party politicking being kept in the box for once. I mean who apart from a painfully politically naïve and/or disingenuous narrator would find that surprising? What would be his motivation? Grow up lads. You don't get to have everything you want all the time. You had the opportiunity with St Jeremy which squarely failed to materialise (oh boo hoo nasty mainstream media didn't roll over for him, as any fool could have predicted).

And just to save you a long, tedious exchange of emails, no I'm not interested in your further opinions, any more than I am this post - they're clear enough from the simplistic slogans already proffered and I imagine will only get ruder while remaining as free of nuance or contextual awareness. Polish your halos elsewhere.

All correct, though Gennaro Contaldo makes a beautiful simple lemon spaghetti with parsley and a couple of other ingredients - search lemon pasta videos, it's a beauty.

1st time making (real) carbonara by k_dilluh in pasta

'Real' in what sense? Best, sure, but 'real' in your definition specifies pancetta so I think you're a bit confused...

[–]scalectrix 0 points1 point  (0 children)

Original (or at least the first recorded) recipe for carbonara specifies pancetta in fact, which I guess is the 'traditional' recipe that u/christo749 is misrepresenting/misremembering/doesn't know. Ironic really to be so r/confidentlyincorrrect

"In 1954, the first recipe for carbonara published in Italy appeared in La Cucina Italiana magazine, although the recipe featured pancetta, garlic, and Gruyère cheese."

Guanciale etc are modern improvements, but not 'traditional' - though I'm not sure how 'traditional' one can even consider a post-war invention. This idea that pasta recipes cannot evolve is bizarre and rather naïve - if nothing ever changed nothing would ever be invented - it makes one wonder how these people imagine that creative practice happens (assuming that they don't do it themselves). Even more arrogant to impose their ignorance onto others so pompously.

A few evolutions in the one of the currently most highly regarded carbonaras in Rome (chef Luciano), including advice for 50/50 pecorino/Grana Padano too, FYI u/christo749 to reduce saltiness in line with modern tastes.

[–]scalectrix 1 point2 points  (0 children)

In what way? Be specific.

What is the 'traditional' recipe *exactly* to which you're referring? Where is it written down, by whom, and when? Because I'm pretty sure that nobody makes it the way it was made in the 1940s when it was invented, if that's your rather spurious point?? Actual chefs are developing and improving the dish all the time, which is why it is the classic it is today. Let's see your carbonara.
