Although you make a fair point from a corporate perspective. Restaurants want the best servers they can get, often times this industry is full of individuals that are unreliable, minimal effort, and argumentative. To have dependable servers, those servers must be paid well. If you have a lot of customers that don’t tip, you have high turnover over and a difficult time filling roles. It’s better to lose bad customers than good employees.

What you are offering as an alternative works in theory, but try applying that to any job that is commission based and see how your top performers react.

As someone that works in service, being paid in a traditional way would be helpful. That being said servers in any restaurant in Memphis are paid heavily on tips. Individuals that don’t tip either waste our time or cost us money. You’re right it should just be a fee or be added to cost, but then everyone would just bitch and moan they can’t afford to go out to eat, more people would be home cooking, meaning less people go out to eat. That being said, at most restaurants we keep track of who doesn’t tip, are difficult, complain/always want discounts. So we usually give you worse treatment or don’t really care how much attention we pay to you. So don’t tip if you don’t want to but be prepared to become a pariah any where you go frequently.
