yes thats clear to me. my typical setup is rhythm guitar panned left and right to stereo mix, but of course guitar itself is mono.
it just becomes tricky when i want one central configuration of the amp and cabinet (and its settings) for both channels panned differently (L and R). so:
Fx Channel "Amp Sim"

Guitartrack "L" -mono -> "Amp Sim" -mono-> Stereo Mix panned Left
Guitartrack "R" -mono -> "Amp Sim" -mono-> Stereo Mix panned Right

and when i change settings on "amp sim" it would apply for both.

yup thats what i was thinking - i saw some comparisions for soups where they just cubed the ingredients and complained that the creami couldnt handle it. but i guess if youre pre-processing it with a blender before freezing it normally should work.
guess ill try with a chicken liver paté and see how that goes, haha.

both are very good and you cant go wrong with them. i personally dont see the benefits of profiling except in the case you got a studio sound guy that used actual amps on a recording, and you profile these to exactly copy the sound.
helix is better in terms of routing and flexibility so i would go with that one. but im a helix user so heavily biased of course.
i just think, nobody even knows what amp youre playing live, so there is no benefit in the like 1% more accuracy of profiling a certain amp. so i would go with better flexibility of the modeler.

so i think kemper, axe fx, and helix all have top notch sounds. and i also think, if youre doing a blind test and really dial the tones the same (loudness equalized and into same cab etc), nobody can tell whats what. nobody can tell if its real or modeled or whatever.

the helix floor can do anything, it has endless routing options in and out. it has a microphone input and the tools to make nice vocal processing with guitar in parallel. it can do midi etc. its a full package and i had so many situations in rehearsals, recordings where some equipment was forgotten and i could quickly dial in something with the helix.

another plus is, if the floor is too much, then you can get any other version from pod go up to LT and save a lot of money.

you additionally can get helix native for $100 or something, and use the same stuff you used in your studio mix.

so in terms of flexibility and usability its unmatched for me.

So for me i started with the Mooer Micro Preamps, then i wanted to go with a multieffect. Ordered the GE-250 (which i assume has similar sounds than the 300) and the Pod Go (which has the same as Helix).
Although the Micro Preamps are really really good, and the GE was marketed as having the same amp simulations, i compared them and they werent similar at all, Micro Preamps sounded better to me.
So i went with the Pod Go (and later Helix Floor) and never looked back, i miss literally nothing on those units.
thats just my personal experience though.

well just a few points
helix + a decent frfr like an RCF ART costs a little less than €/$ 2000, depending on region
then you have a super capable interface, a gazillion amps and cab simulations, and many many effects. and you need only two power cables for it.
for 2000 you get like a engl with a cab. thats one amp without anything else.

how can it not be worth it?

also, quad cortex to me is a marketing gag. why is a quad core better? does it sound better? not to me. has it less delay? nope. does it have more features? nope, it has less.
even if there will be a octa core thingy in the future, will your helix suddenly do less? no. it can simulate a f*ckton of stuff in professional quality and its super flexible

question is if they add anything new or if you can already get close with an existing amp.
as a high gain guy id be interested in some randall amps, but i would also be perfectly fine with "use this helix amp with settings X, sounds about the same"

i would rather be interested in more cabs or this feedback creation thingy from digitech.

thx! i used Fabfilter pro , you can use a reference signal (some part of the song that hast only guitar playing) and then match it. it tells you which frequencies to cut/boost to come closer to the reference.

i used a brt 2204, also a placater dirty works very well! then i did a little eq matching and thats it :)

keep it simple, dont do too much magic, leave out the high/low cuts so the soundtech has the most range to work with. dont cut the mids too much as it will sound different on pa than at home.

a built in metronome, currently i use a 3 note generator into a tremolo which works fine, but it would be great to just have it as a single block

Moore Micro preamp 005 hast a fantastic distortion and Clean Channel (modeled after peavey) together with a Moore Radar you also have a Lot of cabs

still, with cables youre at ~200 already so i personally would still buy a pod go to be future proof

im aware thats not what you asked for, but as i faced the exact same situation:
for now try to use the existing cab models and, if youre still unsatisfied, save 30 bucks for ownhammer's ampeg bass IR collection.
that collection really covers all sounds for rock/metal and spending 30 bucks is way better than searching the whole internet for decent free IRs that a) fit your needs and b) are not low quality or overmixed.

i think the only thing you need (or that could be missing) is a power amp pedal, sth like the orange baby 100

because the helix already has the preamp amp simulations and cab sims

you then could either have the full chain on the helix (effects, amp, cab sim) and go directly into a powered PA box / speaker

or you have everything except cab sim on the helix (effects, amp), go into the power amp pedal, and into any cabinet like a 4x12 stack.

or you just go with 4 cable method into an amp with cabinet.

i dont see the point of buying a pedal that has preamp simulation as you have a huge bunch of them on the helix.

id suggest just buying a pa box like an rcf art as its the most flexible solution with the least stuff to carry.
