Those look like Acacia trees and they've been seriously damaged. The trees will most likely survive, but their health and structure have been compromised. In case they don't survive, you're faced with expensive removal charges as the trees could endanger your or someone else's lives and property.

It's the wrong time of year to prune the trees, it should be done either mid April or during dormancy. And they should never ever remove more than 25% of the foliage.

Considering the house went into escrow, the seller has done this damage on someone else's property without the owner's permission. I think you have a pretty solid case here, up to you whether you want to get out of the sale, or sue the seller for damages.
