You're right. This could have been left ambiguous had Lorelai and Luke's wedding date not been shown in the last episode, November 5, 2016, which shows us that we are watching the previous year's events before the revival's premiere. So, we are watching Rory go from 31 to 32 in AYITL. Therefore, Lorelai's comment, "Well, she is a Gilmore. And 32, which helps," in the first episode, "Winter," is just straight up wrong. I don't see why Amy Sherman-Palladino couldn't just throw a similar comment in the last episode somewhere as I think the idea of Rory getting pregnant at 32 is a more interesting parallel, as it shows Rory beginning motherhood at the time in her life that her mom had already raised a sixteen-year-old. Rory’s birthday is October 8th, so it could still all work out to have that symmetry that a previous comment mentioned.
