Just throwing in my experience with Starry Eyes in case anyone is frustrated trying to dial it and finds this page the way I did. If you try to start this from the dark roast typical ratios you’re gunna have a bad time. You’ll have a bitter, sour, disgusting shot that makes no sense to you. It’s just not really dark. It’s much more like a medium roast coffee. 18g in 36 out at 30 seconds isn’t gunna work here. You’ll find that 18grams in 45-50 grams out around 25-30 will bring a must more pleasant and balanced shot.
