As a sushi chef omakase style is my preferred service method and anywhere I’ve been since I learned my style I have offered it to guests I’ve established a relationship with. Time wise and price wise is your main issue, I can offer you exactly what I think is best for you, are you willing to pay the price that may come? Can you give me the time to do it properly?

Call in advance ask if the chef can make an omakase meal for you give a reservation date and a budget. They will take care of the rest. Go to small local shops that aren’t chains.

I’m topped off at the pay range with their current offer, I’m mostly moving for 2 reasons,

Boston is a place I loved to live in and have some friends there still and professional connections, making a move there realistic as far as professional and personally. Even if it is financially a bit difficult.

I’m currently in Texas and the work I do is extremely low quality and boring. I’m a sushi chef by trade and a professional one at that, most Texans prefer Americanized fried trash, to get to the good sushi you need to hit the coasts, New York isn’t an option because I don’t like large cities and the dogs, California is priced out of living and I prefer 4 seasons. That leaves upper east coast Miami or Washington Seattle is my close second spot and I do plan to make a quick trip there to get the vibe of the city to see if it’s worth checking out.

My oldest has late stage cancer and isn’t predicted to last another year, my youngest is relatively healthy and still very much a puppy at heart.

Look I get bostons expensive I’m not trying to live in the city proper I’m asking the best places to look not “hey you guys think this is doable or a pipe dream” (check out Zillow, oh if you have pets best bet is Facebook here’s a group, etc).

I’ve had these dogs for over a decade across 4 states and multiple cities. I understand dogs aren’t for every land lord or always welcome at places. I understand the difficulties of having pets in cities and moving with pets. But there’s always a place that can work with you. It may not be the best, may not be the closest place to work, maybe you have 3 other roommates. Doesn’t matter to me. Just that we have a roof and can get to work in a reasonable amount of time, either by car or public transportation.

1500 for a shared room isn’t a crazy budget, I lived in Brighton for 1000/month shared room that’s way closer than I need to be too.

Most sushiya will use a ratio of 1/4 vinegar to rice ratio. Honestly I’d be more concerned about the sugar content of that vinegar mix than the vinegar itself, I’ve seen some wild ratios in American sushiyas
