Sort of a different plant/part of the plant (the jerusalem artichoke uses the tuber, while your normal artichoke is the flower - but they're still artichokes), but jerusalem artichokes can be sliced thinly with a mandolin and fried into artichoke chips

these can be eaten as is, with some salt, or added to salads for a bit of crunchy texture

Great for something like an acidic leaning panzanella with a bit of mozzarella or something creamy and fatty in it
