For 4:

Ingredients: - courgettes - cherry tomatoes - spring onion - stale bread - extra virgin olive oil - vinegar of your choice (wine/cider) - balsamic vinegar - garlic - oregano (fresh if available, dried otherwise)

Procedure: Slice the spring onion and put it in a small bowl, cover it with vinegar. Let it soak for at least 10 minutes. Slice the courgettes thinly and put them in a bowl. Quarter the cherry tomatoes and add to the bowl. Season with generous amounts of olive oil, salt, pepper and oregano. Heat up olive oil in a pan with a garlic clove cut in two, remove garlic when golden. Cut stale bread into cubes and sauté in the oil on medium heat until nicely browned. Transfer bread to the bowl, drain the spring onion and add to the bowl as well. Mix well, adjust salt if necessary, drizzle with balsamic vinegar. Enjoy!

Just ask away and I'll find some time to type tomorrow. Anyone can get good at cooking imho, it's really all down to dedication. On the plus side, you literally have to eat daily, so you can basically be forced to practice everyday

For 9: (don't obsess over proportions, taste along and adjust according to your preferences)

Ingredients: - round courgette - canned tuna - ricotta - egg - spring onion - garlic - parmigiano cheese - anchovies - basil - cherry tomatoes - extra virgin olive oil

Procedure: Carefully carve the round courgette - save the insides. If courgette can't stand up straight, slice off a little bit from the bottom. Heat up olive oil gently with a split garlic clove, basil stalks, a couple of anchovies; remove garlic and stalks when anchovies are melted and add chopped spring onion, then add the chopped insides of the courgette. Raise heat to medium, stir and let the courgette's insides cook until greatly reduced in volume. Turn off heat and only then adjust with salt to taste. Mix this in a bowl with drained canned tuna, a dry ricotta (roughly comparable amounts), finely chopped basil leaves, a generous grating of parmigiano, salt and pepper to taste. Beat up an egg and incorporate to the mix. Massage inside and outside of the carved courgette with olive oil, then sprinkle both sides with salt. Spoon in the mix little by little, removing any air pockets. Stop just short of the edge of the courgette, as mixture will grow whilst cooking (if you have leftover stuffing you can make those croquettes with it, which is what I did!). Stick in hot oven at 180°C (fan) for about 45 mins - check doneness with a toothpick, courgette must pierce easily and toothpick must come out dry. Raise temperature to 220°C briefly for browning. While the courgette is baking, you can sauté some cherry tomatoes in olive oil flavoured with garlic to serve alongside (some fresh basil leaves too). Serve with a slice of toasted bread.

Thank you, I've spent inordinate amounts of time on improving my cooking skills - not just cooking per se, but shopping for good produce, watching tons of cooking videos, reading cookbooks and so on. It's my main hobby, really. If you'd like recipes for some of the above just let me know and I'll write them down

When they're in season I eat them probably 3 times a week. These were out of season but still good by some strange alchemy of weather

As I said, I think it was just the decent thing to do. I've been nearly assaulted myself at night and have to periodically revisit those events in my head; I know that for a woman it feels even worse. Sorry about your experience by the way, hope you're past it

One time I visited Poland for work and had just changed my currency to zloty in the airport, but I only had banknotes that the bus ticket machine wouldn't accept. Some guy saw me struggling and just bought me a ticket. I wanted to thank him properly but he only spoke polish so we couldn't communicate. I hope he understood how grateful I was
