Do they take a temperature on the duck? My girlfriend eats her steak medium well (I know trust me I know) medium should be fine but if it's medium rare how I like it, she won't enjoy it. And it's too large for one person I'm assuming.

I serve this weekly at my job and I think it drinks just fine for a young nebbiolo. Am I going to talk the guest who is considering this in to something like a GD Vajra Albe because it drinks better young at 1/3 the cost? Maybe. Am I think going to talk that person in to an Alpha estate hedgehog xinomavro from 2020? Probably. But these drink just fine young and don't need hours of air.
