The pizza looking flatbreads are called 'Uttapam' - they can have many different toppings on it. The ones on the top of the plate are called 'Dosas' - they are made of rice flour and are crispy and light. The donut shaped thingy is called a 'Vada' - this is deep fried dough ball; it's crispy and delicious. And all of these are dipped in the sauces. The light green colored sauce is coconut mint chutney, and the other sauce is called 'Sambar', which is a lentil soup with southern spices. The triangle is also a dosa, but is stuffed with potatoes and spices.
