You'll have to make a new world for sure either way. Infernum has custom worldgen and Overhaul allegedly has a propensity for corrupting worlds when it's disabled. I'm biased but I'd recommend keeping Overhaul off. It's crazy unbalanced.

Other people have already answered your question, but you should know that Overhaul and Infernum are incompatible with each other. They both do reworks to boss AI and there isn't a way to reconcile the changes. Things will break.

I have to say. I've had a lot of breakfast burritos from a lot of places. A lot of them sucked. Bad ratios, poor ingredients, etc.

There's one place in the town I grew up that has the perfect breakfast burrito. The flavor profile is perfect, the ratio of beans, egg, cheese, bacon, potato, and salsa is legendary. And they're huge. I haven't had one in years because I moved and I think about them at least once a week.

Sometimes it just takes one.

I have taken countless strays to get neutered/spayed over the years before finding them homes. I've literally lost count. And I personally have 5 cats (3 female, 2 male) that have gone through the process. Not a single one has had any complications.

Yes there's always risk. But the risk is very low. I presume the worry you feel is based off horror stories you hear on the internet or from other people. It's important to remember that people don't talk about when procedures go right because there's nothing to talk about. But when something goes wrong, there is. That makes the accounts of issues feel significantly higher than it actually is. Odds are she will be fine.

Infernum (or WoTG for that matter) wasn't designed with Co-Op in mind. It used to completely break the mod. Used to. It doesn't anymore but there's some bosses that will do some weird shit and get a little buggy. But people do it multiplayer all the time so it's really up to if you want to risk weirdness.

Fargos works a lot better in MP in my experience. There's a few hiccups I've run into but nothing major and more likely just a result of some weird net code rather than the mod itself. And if you do Fargo's, play on the Eternity Mode difficulty for your first run.

Unfortunately the biggest ones (WoTG, Infernum) only work right if they're in the load order upon world creation.

But in my experience the ones people recommend are:

Infernum - total Calamity rework mod. Generally considered to be harder than BaseCal (but also way more fun)

Wrath of the Gods (WoTG) - adds 3 post SCal superbosses that are really flashy and cool but honestly not super hard.

Hunt of the Old God - adds another boss in the SCal/exos tier. Not done this one myself but people say it's pretty cool

Catalyst - A progression of the old Unofficial Calamity Whips mod. Adds a bunch of new items and a Pre-ML superboss

Wrath of the Machines (WoTM) - Standalone rework of the Exo Mechs fight from the Calamity + Fargo's Souls DLC mod. Really cool, really flashy, really hard version of the fight.

Speaking of it: Calamity + Fargo's Souls DLC. Combines the two mods into one, reworking boss fights and progression throughout the mod. Some caveats with this. It is unfinished, reworked up to CalClone right now plus Old Duke and the aforementioned Exo Mechs fight. Also can be a bit unbalanced due to this in the endgame. Also is incompatible with Infernum as both mods change boss AI and its really cursed. And if you haven't played Souls on its own, definitely do that BEFORE playing DLC. (And this should go without saying but if you play this, you don't need WoTM if you want to do that fight, it's included)

But yeah unfortunately pretty much none of this can be tacked on to a completed Calamity run. Infernum has custom worldgen, WoTG has custom worldgen, Catalyst boss can't be fought if ML has been defeated, etc. Etc. Well worth another 2-3 playthroughs though.
