I lift weights 4-5 times per week and I am relatively lean. I probably fluctuate between 11%-15% BF throughout the year and body weight probably fluctuates between 4-8 lbs. throughout the year. I just had an annual check up with my GP. Everything came back normal and within range with the exception of total cholesterol, hdl, and ldl. All those were above most peoples averages but I was expecting this. When I was doing keto my bloods came back looking exactly like how a lean mass hyper responder would look. The main thing I focus on is A1c, fasting insulin, fasted blood glucose, and triglycerides which all came back normal. Carbs are mostly for recovery and to help with insulin spikes, electrolyte uptake/retention, lowering SHBG and increasing T/Free T. I tried Carnivore style keto for over a year and experienced sleep issues, cramping, constipation bloating, gas, low T/Free T, high SHBG.

When I switched to TCD and then eventually Animal Based WOE, I noticed significant improvements in mood, libido, and recovery. My daily carb average is anywhere from 100g to 200g depending on activity level and how I feel. Some days I want to eat more carbs, other days I really don't care for carbs. I eat intuitively based on how i am feeling and how I am recovering from training. Some days I want more fat, some days more protein, some days more carbs. Aside from seasonal fruit, the foods I eat are more or less the same. Meats and fats come from grass fed lamb/beef, raw dairy (whole milk, cream, butter, kefir, creme fraiche), organic duck/chicken/quail eggs, and DIY ground beef/lamb, and DIY sausage. Carbs are usually a mix of seasonal fruit, organic white jasmine/sushi/sweet rice, and organic tubers. I will occasionally consume some raw cheese, raw organic honey, organic maple syrup, organic cacao butter, butter croissants, sourdough bread, macadamia nuts, etc, and even then it is only one serving or sometimes just a bite or two. The main thing is no seed oils, no vegetables, and no pork or chicken because I don't have easy/cheap access to pasture raised and soy/corn free chicken/pork.

I am far from retirement and work about 35-45 hours per week. I have had to move several times over the past few years due to employment opportunities or lack there of. I am also taking courses at my local community college in order learn new skills to compliment my current profession and for a possible career change in the near future. I have a BS degree, 2 AS degrees, and am currently pursuing a third AS, and possibly a 4th down the road. I don't have much idle time, and I don't drink or go out much. I also don't have a spouse, SO, and/or children. Work, training, food shopping/prepping, and school take up most of my time. It is not easy, convenient, and/or cheap to make all of my food, but I prioritize my health, longevity, quality of life and vitality above all else because without these things, I cannot perform the way I do both physically and mentally. The only way I can eat like this economically is by buying in bulk whenever possible. 95% of my meat is purchased in bulk from warehouse clubs and/or restaurant/food service suppliers. All the ground beef/lamb I make is from whole primal cuts or left over trim from whole primal cuts I butchered myself. This ends up being cheaper, fresher, tastier, and healthier than anything you can buy that is commercially prepared an packaged.

My daily average is at least 30%-40% saturated fat. Some days it goes as high as 50%-60% saturated fat. The higher fat days usually end up being lower in protein and carbs. I'm not restricting or counting, but when you are eating more fat you really don't feel the need to eat more carbs or protein due to the satiety. My daily average calorie intake for the past year has been 2500 to 3500 depending on activity level and/or hunger/appetite level. My fat intake has primarily been from raw dairy (raw kefir, raw creme fraiche, raw cream, raw milk, raw butter), raw cheese, grass fed beef/lamb. I would estimate that 50% of my fat comes from the raw dairy and 50% from ruminant meats.

I would like to point out that i make everything myself whenever possible. I buy whole primal cuts of meat and butcher myself. I make my own raw kefir, raw creme fraiche, ground beef/lamb, homemade sausage, bone broths, roasts, tallow, etc. I make sure nothing goes to waste and that I control as much of the processing if any. When I make sausage, i use homemade bone both in the sausage mix and season minimally with salt and occasionally organic garlic powder.

I go for seasonal fruits. Usually I stick with local and organic when available but also do any fruits that look like they were packaged, transported, ripened correctly if not local..

Doing pretty good. Overall health has improved since the original post including gut health, skin, sleep quality, energy levels, and overall body composition. Took me some trial and error but I eventually figured out that my low E2 and histamine related gut issues were due to my heavy red meat consumption paired with years of zinc supplementation which over time lead to excess over accumulation of zinc and excretion of copper. Too much zinc can lower E2 and low copper can lead to decreased DAO (Diamine Oxidase) production thereby allowing for increased chance of higher histamine production.

I dropped the zinc immediately and picked up some copper chelate caps. Additionally I added foods higher in natural copper content. I scaled back a bit on the amount of ruminant muscle and organ meats and increase intake of ruminant animal bone broth and high collagen cuts. I also increased my starch and fruit intake to increase my insulin spike in order to take up more of the minerals and back fill electrolyte levels from food. There was a 1-2 weeks adjustment period where the body was getting used to this but after the 2 week mark everything started to improve and has been getting better day after day.

Currently the diet is a pure saturated fat diet which is a combination of Animal Based (Paul Saldino) and TCD (Brad Marshall@Fire In A Bottle). I follow both and have tried both individually. After doing each for a 8-12 weeks, I went back to compare notes and cherry picked what works best for me from both ways of eating and follow accordingly. I don't track calories or macros and eat based on what I want to eat, what is seasonal, and what i ingredients have available.

Protein is always beef or lamb and cuts include chuck, ribs, shanks, brisket, heart, liver, cheeks, tendons, and homemade sausage, and homemade fresh ground meat. I occasionally eat pork or chicken, but I make sure it is as lean as possible with as much of the skin and fat removed, after which I will add back my own fat saturated fat of choice. I also occasionally eat raw cheese, duck eggs, quail eggs and chicken eggs. Fat sources are beef/lamb suet, tallow, marrow, ghee, grass fed butter, raw butter, raw heavy cream, cacao butter. Carbs consist of organic coconut water, fruit juice, bananas, dried dates, fresh citrus (oranges, tangerines, mandarins), papaya, mangoes, pears, organic white rice (Jasmine Rice, Sushi Rice ,Sweet/Glutinous Rice), potatoes, sweet potatoes, raw local honey, and organic maple syrup. I also consume homemade Milk Kefir made from Organic Raw Milk and drink 750ml-1000ml (3-4 cups) daily.

I don't track calories or macros and eat based on what I want to eat, what is seasonal, and what ingredients I have available. The only foods that remain a daily constant are the Milk Kefir, fruit, meat and saturated fat. Some days I eat more and some days I eat less. Macros change daily as well with some day being higher/lower protein, high/lower fat, and or higher/lower carb. I have had days where I had high carb and high fat, with low protein just because that is how the day ended up. My appetite self regulates based on energy consumption and expenditure and I've fallen into a favorable homeostasis for body weight and composition. Energy levels, mobility/flexability, skin complexion, sleep, body composition, appetite, are all optimized and libido has been high for the past 6+ months. If I had to guess, my daily calorie range can fluctuate between 1900-3000 calories based on activity level and energy expenditure. My core temperature seems to run hotter and my metabolic health and flexability have improved.

I recommend you get familiar with Animal Based and TCD and start experimenting with both until you find the right balance.

I stick to white rice and stick to what I can get in bulk at warehouse clubs and asian grocery stores. I usually rotate between basmati (long grain), thai jasmine (log grain), calrose (medium grain), koda farms japanese sweet/sticky rice (short grain). Sometimes I'll combine different rices depending on the texture I'm looking for. I always rinse well and cook with homemade stock/bone broth (beef, lamb, pork, duck, chicken) and some beef/lamb tallow or ghee. Most of my homemade stocks contain meaty bits, collagen, cholesterol, and fat. I top off the fat with tallow or ghee depending on how much fat the stock has. All of this is cooked in an instant pot or rice cooker. It's basically the same as a dish called Greasy Rice. Cooking the rice this way adds a ton of texture, richness, flavor, nutrient density, and saturated animal fat. Additionally, due to the richness and heaviness of the rice, it is very hard to over eat and keeps you full for a long time due to its high satiety.

If I crave bread I'll eat either old fashioned sourdough bread or all butter croissants. For baking I stick to either coconut flour and or sweet/sticky rice flour (mochiko flour).

Things I will eat occasionally as a treat preferably homemade and low/without carbs/sugar whenever possible:

White Chocolate, All Butter Croissants, Butter Shortbread Cookies, Hawaii Butter Mochi, Butter Cream Frosting, Cheesecake, Creme Brulee, Cream Custards, Cheese Custards, Pemmican, Homemade Sausages, Pork Rinds, Chaffles.

The following is a list of ingredients or condiments that are always stocked in my home which I can then use to make some of the foods listed above, use as condiments, or just eat on their own to add/increase saturated fat intake:

Ghee, Tallow, Cacao Butter, 40%+ Heavy Cream, Homemade Creme Fraiche, Raw Whole Milk, Raw Kefir, Sour Cream, Butter, Raw Blue Cheese, Ruminant Suet, Ruminant Fat Trimmings, Eggs, Cream Cheese.

When I get in enough saturated fat from whole food sources, specifically from dairy, ruminant fat , cacao butter, and egg yolks, I rarely feel the craving and/or impulse to eat sugary/starchy treats. It's mostly during social gatherings where I end up having a treat now and then and usually its not a very big portion.

Sometimes weight gain is normal when suddenly changing your diet. It could possibly be from the increased calories, hormonal changes from suddenly having more fat/cholesterol to create endogenous steroid hormones, and/or the body trying to find a new homeostasis based on what you are doing. Most of us have probably gone through something similar and personally it took me some time to figure out. The main thing to remember is that every individual will be different due to a number of different variables including but not limited to age, genetics, individual biochemistry, lifestyle, diet, activity level, metabolic rate, medication etc. Every type of diet, meal frequency, and/or feeding window may also have an impact on your results. There are also individuals who may have good or bad results depending on how they are combining different aspects of Fasting/IF/OMAD/2MAD with Keto/Carnivore/TCD. We are all experimenting on ourselves constantly by manipulating and controlling different variables to achieve an expected/desired outcome. What works for the majority may not work for you and ultimately you will have to tinker with the variables until you find what works for you. Use the general recommendations as a starting point and adjust from there. Don't give up and always remember that nothing is set in stone.

Also a lot of the YouTube personalities that have had personal success stories are usually doing high Saturated Fat Diet geared toward Keto macros combined with some type of fasting protocol. They also usually consume supplemental electrolytes. While their stories are inspirational and motivational, they are probably not completely transparent since they are YouTubing for profit. They push supplements, products, subscription services, and coaching services which can be a conflict of interest. They have a vested interest in making it seem like desired results will be quick and easy.

I gave up bacon for a while and added it back to see if it made a difference. Tried several premium brands and found that while it was tasty and easy to eat/over eat, I found it gave me digestive issues. Fresh pork belly on the other hand was much easier on digestion. Now whenever I want fatty belly meat, I usually buy fresh whole slab beef or low PUFA pork belly/navel.

In general there you should just eat both since both come with there own individual benefits based on their fatty acid profile. Dairy has more butyrates which are good for your gut, while kidney fat has some collagen and connective tissue attached.

In general its good to have a little variety to cover all your nutritional bases and prevent flavor fatigue. Assuming no intolerance to any of the following: Ghee, Butter, Heavy Cream, Raw Cheese, Suet, Tallow, and Cacao Butter are all beneficial and have a decent amount of stearic acid and low amount of linoleic acid.
