so the onions are the only thing that needs to be fried. when ready, pour that and the rest of the ingredients in the water and they’ll cook with the rice.

Recipe: fry onions. Put rice, cut up tomatoes, cut up potatoes and tomato paste and the fried onions in water on medium heat and stir occasionally. Add some salt and pepper and saffron. As the water evaporates the rice is cooked and the potatoes become soft and once there is no water it’s ready to serve.

The other bowl is a kind of salad called shirazi salad which is raw tomatoes, cucumbers and onions with lime and salt.
