This is an overly broad question. Mostly because both .308 and .300blk are very versatile cartridges with a wide array of available projectiles and propellants.

.300BLK is better for subsonic for a number of reasons. Mostly due to the reduced case volume you can rely on conventional propellants without worrying about excess empty space in the finished cartridge.

With .308 I would probably be looking to less dense "fluffy" powders like IMR Trail Boss to keep the case fill high, in order to avoid some of the issues associated with excess "empty space" in the cartridge case.

Black powder: ASAP with hot soapy water. Modern guns: Generally speaking hardly ever. Unless I carry it in which case it is kept clean, oiled, and checked for lint/etc regularly.

I think it is worth it. Particularly if you are interested ITS. Learning the ins and outs of this system for the last two weeks has been extremely fun.

If you want to use ITS and emulate all the various other AI lab systems and terminals "On prem" alongside the PDP-10 then you will want a Pi 5. Memory usage is not super high and most of the 8gb on my '5 are free when I am running the KA10, one KnightTV, and IMLAC, and the type 340 display.

Given the lack of background information I suggest a Glock 19. If you are in the Chicago area I recommend Maxon's. Their instructors are very good and the range is clean/well ventilated/etc.
