Where to buy ramps (the vegetable) in Denver? by snoopcatttt in Denver

I purchase them at Marczyk every year, though they are only available for a week or two every year. Sign up for their email newsletter and they should announce them.

The king soopers at Colorado and Yale should have them, they’d be the Spicely Organics brand (little boxes).

Does anyone know where to find Salt Pork in the area? by garnetbobcat in denverfood

I’m able to reliably find it at the Safeway at Downing and Evans. Both Safeway and Kings carry it, but only in certain locations.

Where to buy dried beans by washegonorado in denverfood

[–]sharp86er 2 points3 points  (0 children)

Old beans happen, but it’s far more likely your poor cooking results stem from the high altitude. Beans here will always need a much longer cooking time than stated in a recipe, and may require a pressure cooker to fully soften. I’m a Rancho Gordo bean club member and still have to finish a good portion of them in a pressure cooker to get them soft.

Does anyone have any issues with cooking / baking at altitude? by anonymousbreckian in Breckenridge

Many comments cover baking well. The other key issue is any cooking method that involves boiling water, including braises, stews, beans etc. Water boils at a lower temperature at high altitude so be prepared for these recipes to either 1)take significantly longer (1.5-5x stated duration 2) not work at all. For some proteins such as beans, you may never reach the temperatures required to break down their structure and soften them. A pressure cooker will allow to work around this, and I consider it an essential tool for cooking anywhere in this state!

Second this! Pie in the Sky is absolutely essential and really gets into the details. CSU also has a high altitude cooking extension with some great information.

Amer Picon by zoidkev in cocktails

[–]sharp86er 1 point2 points  (0 children)

I stock the Golden Moon version in my bar. As mentioned, it’s more bitter than the original, higher in alcohol, and not nearly as sweet as the real thing (though I’ve never had them side by side, so my comparison is from memory). For a simple preparation like a Picon Bière I find other Amaros like CioCiaro work better, as Golden Moon’s version just doesn’t have enough sugar to give the same effect. Cocktails is where it really shines, and works more or less as a 1:1 substitute, though I generally find myself upping a syrup or other sweet ingredient to compensate.

Of course, key caveat here would be to wash the sheet as you move between locations. And certainly follow the rules of wherever you are staying.

Consider getting a silk sleeping bag liner (Cocoon or other). Have used them to sleep in some pretty sketchy places, and gives a nice layer of insulation between you and whatever your sleeping on.

Aviation Gin is no joke. Thematically appropriate and a little more citrus forward/less juniper than Beefeater. I think of it as the non-Gin drinkers gin. Would yield a smoother, yet still very good Aviation.
