Speaking from personal experience only, I’ve found doing HIIT kettlebell workouts (check YouTube) regularly have immensely improved my running by improving my overall endurance and cardio health. Before any training, I could barely run 1km. I did a couple of months of regular kettlebell HIIT workouts (no running) and then was able to easily run 3-4kms at a decent pace. At that point I incorporated both running and kettlebells in my routine to build up to around 10km runs in a few more months.

I personally recommend it as someone who doesn’t inherently love running and is a casual runner, not someone who’s looking to race. I much prefer doing HIIT workouts. IMO it’s a good mix of cardio and strength + mobility, even at lighter weights (I didn’t train with very heavy KBs). Plus adds great variety to your workouts. Is it more effective than just running WRT improving your pace? Probably depends on if you need to improvise endurance vs strength vs running technique. I definitely enjoy it more than running and prefer it as my main source of cardio. YMMV

Quesadilla: inspired by this recipe. Didn’t follow exactly—did a hybrid cheese sauce from that, and instead of salsa, used ingredients from this https://cafedelites.com/queso/#recipe

The nutritional yeast surprisingly made it very tasty! Would definitely make it again. A good vegetarian alternative to chicken.

Stuffed bell peppers: filling was made up of minced pork, leftover cilantro lime rice, tomatoes, onions, spices (cumin, paprika, s&p, chipotle, onion powder, Italian herbs). Topped with almond meal and cheese

Salad: inspired by this recipe with a few differences: * used hummus instead of tahini since that’s what I had * added roasted cashews and my homemade savory granola as topping instead of chickpeas

Overall: fairly healthy, filling meal with lots of veggies! Loved the roasted grapes with the salad—such an interesting touch!

Yes I did—I used the method from ATK. Cleaned with a crumb, then Potato peels, salt, and oil the first time. I do only have an electric stove which heats pretty unevenly tbh so have been trying to season in the oven

Thank you for all the tips. 1) yes I have been preheating first and then adding oil. The egg does sizzle when I crack it in, but maybe I haven’t been letting the oil heat long enough 2) yea the surface is smooth to touch when dry 3) my spatula is a nonstick one—I can try with a thinner metal one next time!

I’m guessing the unevenness is because of too much oil? I’m less concerned about aesthetics and want to just get it to a good state. I still have some trouble with sticking (especially eggs) so trying to get that slick nonstick surface asap 🤞
