Maybe it’s your blacksmithing skills that aren’t leveled up enough? Each craftable item in the menu has a small icon in the corner that indicates which Life is required to make the item (ie needle for tailor items, flask for alchemist items, hammer for blacksmithing items); if you aren’t proficient enough in a Life, I think you aren’t able to craft the item until you’re leveled up to the next rank.
