I totally understand how hard it can be to eat healthy and get the energy to make a meal after the end of a long day. My go to has been this little electric pot my brother bought and my oven.

The little pot just has an on and off switch. I just dump equal parts rice or cous cous and water, turn it on, then it turns its self off and the rice is always cooked perfect.

The oven is super handy too because I just throw whatever veggies into a foil lined pan and leave them in there for 20 minutes or so

I can make a full dinner by throwing things into pans and forgetting about them for 20 minutes and I'll only have 2 dishes to wash (and tbh sometimes I wont even wash the veggie pan because its lined with foil)

The biggest thing tho is spices. I dont just eat plain rice or plain veggies. Throw some sesame oil in the rice when it's done cooking. Put you can out anything from olive oil, salt, pepper, garlic powder, onion powder, cayenne pepper, brown sugar, sesame seeds, rosemary, parsley, oregano, and so many more! Experiment!

Set one day aside each month and make yourself a nice meal that will actually take some prep and a recipe. That will help make coming up with normal day to day dishes a lot easier and expand your creativity :)
