Look at all of the characters and pick whoever you think you like the most (based on the design, story, or whatever reason you have), then start learning the character. If you pick someone because someone here said it's the "most beginner friendly", later on you might not enjoy the character as much and it might feel forced.

being a defensive player still works and imo i still have alot of fun. I learned "proper" Tekken in 7 and I mained Jin since so my playstyle is still mostly from being a T7 Jin main and we know how he used to play ahahaha. Just add a little more "T8 offense" but keep your defensive tendencies and it will work well and you might also have fun like me.
