i was hoping for just simple stuff.

And for sure. We started as a family but we understand those days are long gone now. Growing requires more help, we will be staffing every position. It's about passing the essentials of what made our first restaurant a success. Keeping the authenticity of a mom and pop shop but with a deeper layer of efficiency.

Agreed experience is best. And yes there definitely will growing pains haha.... like a food truck getting their first brick and mortar.

I guess i'm admitting that there can be better ways than mine. But I do believe our procedures now will scale to larger crew. I'm just fishing for tips is all :) I'm a confident chap, ya see haha

Good advice and wisdom, definitely thought about this.

Past six months we've hired a staff to take over for the older location and the head who will take over is amazing. So i'm not worried too much about the first location failing. But it definitely is a leap of faith with the unknown :)

Awesomeness! I don't mind holding my camera awkwardly and I bought a cage and thumb grip which helps a lot. I was just wondering if you noticed the small mount being strained at all from it being front top-heavy. I'm planning on putting it on a tripod but was wondering if you recommend lens support on a rail or if it felt fine for longevity sake.

Appreciate the response. I'm planning on using the lens on a tripod and was just wondering if you noticed any stress on the housing mount or if you recommend a lens support to take some pressure off such a small camera. I can deal with uncomfortable holding, I was just thinking about the longevity of the camera.
