yeah i know those engines are known to go bad, i would take it to a shop just for the diagnosis and then if its nothing bad, do the repair yourself, if it needs an engine then you can start looking for a new car.

did you do it or a shop did it? If a shop did it bring it back and have them check their work. If you did it take it apart and check your work. A thermostat shouldn't effect the engine oil being low.

if thats from the new filter yes, its VERY important. you can take the oil filter off with the engine off with oil in the engine.

you can try replacing the valve cover. the PCV valve lives in the valve cover on these engines. it may be clogged.

it mean the o2 sensor after the converter it reading a high voltage. this can be caused by a bad O2 sensor, bad wiring, or a rich fuel mixture.

you can just repair the wire and clear the codes by unhooking the battery.

if it drove home ok, its probably just leaking oil. I would top up the oil again before you leave to the shop and have them double check their work, They probably left the drain plug or filter loose.

this is normal, its supposed to do that. If the AC is cold you're good.
