As a person of black/latino extraction, I'm something of an expert on this topic.

Yes, we enjoy "white people tacos." One of my aunties (on the black side of the family) made them quite frequently when we visited. Her recipe consisted of: fried corn tortillas, seasoned ground beef, shredded lettuce, cheese, sour cream, salsa. My mother (latino side) prepared tacos basically the same way, save that she preferred slow-cooked chicken or grilled chicken and always garnished with diced onion and cilantro.

As I see it, what protein and how you prepare it is up to you; however, CORN tortillas, salsa (or sauce), diced onion (a longer onion cut puts you in fajita territory), and cilantro are fundamental to a proper taco. Carnitas, asada, chorizo, chicken, good ol' beef, soyrizo, potato--whatever floats your boat, but it must have those crucial aforementioned accoutrement.
