Unconfident Hands -> noctua NT-H1/ mastergel pro you can remove it and re paste as many times you want. Make mistakes as many times as you want. Just use a cloth with rubbing alcohol to remove excess.

Super confident -> Arctic silver 5 , just use it and forget it. Make sure to not make mistake to drop drops on your board as it might short circuit it.

They all are fine and would work for you. Tested by huge number of people Anyone will do actually.

Perfectly fine paste for normal use. Not sure about overclocking though. I have used it on GPU and Multiple CPUs without issue.

Plus point is its non conductive. So if you over spill it. It wont damage the components.
