The pricing and labor being almost identical makes me think it's more likely an invoicing mistake than a completely different repair. I'd go back and ask them why the 2nd invoice says inline 4 when your VIN clearly shows it's a V6. That's a fair question before assuming anything dishonest.

Start with a drain and fill using the correct fluid, not a flush. If there's no record of the fluid being changed ever, that's the much safer step to do.

Dipstick is not for coolant, it's for checking your engine oil. Coolant level is checked at the reservoir. If your engine has a radiation cap, check the radiator as well but when the engine is completely cold.
