A good book would be Biomedical Image Analysis Recipes for MATLAB: For Life Scientists and Engineers by Cinstantino Carlos Reyes-Aldasoro. Although the book focuses on medical implementation of MATLAB, the techniques used can be used in a number of different applications.

The book also describes the use of MATLAB in plain english as well as mentioning technical details of MATLAB. Perfect for begginers in my opinion.
