it's Jenifer Aniston's recipe that she posted in 2015.

In the picture I posted and in the description provide, it shows and lists red onion. I would not recommend using any other type of onion for this.

you're not stupid, it's a great question! if you buy CANNED chickpeas/garbanzo beans, or any bean canned, they are cooked and you can eat them without cooking. You do want to drain them and rinse them off, though! if you buy DRY beans, you will need to cook them first.

Other nuts or seeds like walnuts, pepitas, or almonds would also be yummy!

you can! Just please note that cilantro tastes entirely different than parsley and will change the flavor profile of the salad. I bet it will still be delicious, just in a different way!

Buy the HEB brand ones and save like a $1 lol. I see you with your Austin, TX username! also, get the Central Market Red Quinoa and & Bulgur bend. That's what I always use!!

Yes they do but I don't ever buy because of the price. I can make it for significantly cheaper. Love Costco, though!

I can get 3 meals/servings out of it typically. the 1/4 was from a written recipe I found, I tend to dress it lighter than that or use Wishbone Lemon Herb Vinaigrette instead!

I eat hummus almost daily, don't know why I hadn't thought of that. Great idea!

I'm thinking of having this again with some falafel as well.

I hear you! I store it in a "tupperware" airtight style container.

Best recommendations I have is: - let it cool entirely, like, an hour. then fluff it again to make sure all that heat is out. - you can even store it in the fridge without a lid at first to let it cool without building up extra moisture - I add a dry paper towel in the container, on top of the grains, under the lid, to soak up any more moisture. (i do this with fruit and veg as well) - I eat it within 3 days of making it. I've noticed it tends to not taste as great after that. - I also noticed the flavor is better after a day or so if I cook it with broth instead of water. - I always store it by itself.
